If you add sugar to hot besan, then sugar will melt and the mixture turns runny. You won’t be able to bind the mixture. You will have to stir the besan and ghee mixture continuously for even roasting and prevent burning at the bottom.

You will get around medium ladoos. Sugar - Always use powdered sugar for this recipe. If you have granulated sugar, blend it in a blender to make a fine powder, or use fine caster sugar. Generally, people use store-bought besan. But, while making Besan ke ladoo, you should always buy ladoo besan. This is a separate kind of besan which is ideal for making besan ke ladoo. Garnish by lightly pressing a half cashew nut onto the top of each besan laddoo.

Besan Laddu or Besan Ladoo is a sweet that I grew up eating. Place a kadhai or wok on low heat and pour in ghee. Remember that this should only be lightly coloured and not turn brown. To know if you have done the roasting of chickpea flour right, taste it. If it is raw, it means it is undercooked. If it is nutty, then it is perfectly roasted.
